Started as a truck.
Kept the fire.

La Chispa started as a taco truck parked outside the swap meet — same trompo, same tortilla press, same music too loud. When we got the building we painted it pink so the regulars could find us. They did.

Nothing here comes off a delivery truck frozen. Tortillas pressed through the day, meats over real fire, and the salsa bar rebuilt every morning at seven.
